Another Pandemic Holiday Season

 Happy Spooky Season! 

We are coming up on another wonderful holiday season that is only going to be filled with SLIGHTLY more togetherness for those that are able to travel or be with people they were not able to be with last year during this time. 


For my family here in my home, we have some fun plans coming up for this season and we cannot wait to do them. This includes celebrating Halloween with a costume walk around the neighborhood (weather permitting), a spooky scavenger hunt with goodie bags and treats to find, some fun cookie decorating and goodie making, a family pumpkin picture painting activity, and of course making decorations and getting the house all spooky! (I still need to purchase some lights but I am working on it). SO we will be super busy the next few weeks getting the house together and preparing for all the fun to come. 

This really is my favorite time of year because I love the colors, scents, and sounds of the season combined in all the different ways you can do so. 



Of course, this year also comes with its own stressors of the kids being back in school (with masks and with the older ones vaccinated), thinking about all the planning that comes with the holidays when we go from one to another within a month of each other. 

There is one major difference this season and year though, I am more prepared than I have been in a long time. I have made lists and done research about things the kids have mentioned wanting and about what I want for Christmas, I have thought about the dishes we will prepare for Thanksgiving, and I have already ordered the rest of the items I need for Halloween apart from the lights that I still have to get. 

So while the holidays and even the regular days are not 100% back to "normal" we have a great start to this year's festivities and I am excited to see how many new memories we make.

Creating A New Focus for 2021

As the sun rose on the new year it felt different. Social media wasn't flooded with resolutions to disappoint us halfway through the year, instead, there was a quiet, more careful approach to the year. We seemed to step into 2021 like a deer into a quiet clearing, our ears listening for danger, our feet ready to run into hiding. 

2020 had stirred up our anxiety, fear, and sense of self-preservation. With all the losses that 2020 brought we may wonder what this year has in store. So we tip-toed in and now are waiting to see what happens. 

At this point, I have made a decision to take it one day at a time. I will fill out my calendar with the important things, still make plans when possible (and as safe as can be), and embrace the year for improving myself and my family even more than we did in 2020. 

I was able to work with my family to have a pretty smooth last year so I feel like we really are in one of the best places to embrace this year with all we have. Knowing that we are still in the midst of the Pandemic and that it isn't safe to be with friends or distant family makes it a little bit glum for planning the year. We know we won't be able to celebrate any of the spring birthdays with anyone but our household, but for us that is okay, it means we will save some money, we will be safe, and we can always use the money later for planning something fun or the holidays at the end of the year. 

Instead of making resolutions this year, I came up with a list of "New Year Practices". This is a list of things that I would really like to work on and hopefully achieve a regularity of accomplishing. A few of these I started working on in the middle of last year. Now I have them written down and I can see them daily when I open up my household binder! 

Here is what I want to work on. 

1. Making meditation a daily habit. 

2. Communicating my feelings so I don't hold them all in. 

3. Getting some plants. (Not only will this be a fun thing for me because I love gardening, but also is good for my mental health and the quality of air in my home if I get the right ones.) 

4. Make healthier choices. (For this particular practice it includes small choices like not snacking on bad foods to larger choices like what workout to do for the best results.) 

5. PURSUE MY PASSIONS! (This includes everything from my photography, blog, vlog, art, and writing.) 

I think that each of these is easy to achieve with a little planning and hard work. 

Another resource I am happy to have found is the email list of 4 Hats and Frugal - Family Finance Expert. If you join the email list and read the blog you can get a free printable on Fridays as well as all kinds of useful information for using to live your best life. As a bonus to being one of her loyal followers, I was able to take advantage of a recent freebie that is the backbone of my year being what I want it to be! 


One of my favorite things to do to keep track of what I have to do is use lists and planners and low and behold....a freebie of a printable PLANNER! 

Now just as the title of the planner says I can be a more "Focused Mom". It has all the parts I need to organize my house for the entire year! 

If you like lists or want something to keep track of how busy life can get I highly suggest you get yourself a planner. Sometimes you can find a printable version online but if all else fails check Amazon or even just google it. There are tons of cute and functional ones out there to motivate you to organize! 

Another tool I tend to utilize is a large whiteboard, I am working on also getting a corkboard to go beside it but right now I use it for writing our menu for the day, decorate for the holidays, school schedules when we are getting used to them, and any other notices we need to be able to see in that day. 

I think to find some balance this year we have to be prepared for whatever we may have come our way. 
For some of us, that means organizing into planners and calendars so there are no surprises. We have to log when our payments of bills are due and try to put something aside in savings for unexpected bills. For the last couple of years by doing this we have been ready for any financial necessities, extra bills we add, and even for the holiday season to splurge a little more on gifts. This year I am going to make sure we stay on top and since the budget is always being checked against what is spent, we are always on top of things. We may not be the richest of families but we live a life that isn't unhappy. 

We do what we CAN with what we HAVE! 

It has worked for the last 4 years since our family changed and it has been great. Life has thrown its fair share (plus some) of lemons at us but all in all, I feel like our family has stuck it out pretty well only improving with time like a good cheese. (yeah I am not a wine drinker but love a good cheese) 

Just take this year and put into practice some ideas you have always dreamt about. Take it one day at a time, one task at a time, and don't forget to breathe and take time to dream!

Simple Butter Drop Biscuits


****I don't know about you, but I myself absolutely love buttery crumbly biscuits with my sausage pepper gravy and this recipe is the best for it.***

You will need: 

  • 1/2 cup butter (I like to use cold and shred it in with cheese grater) 
  • 2 cups AP Flour
  • 1 tbs baking powder
  • 1/2 tsp salt
  • 3/4cup + 2 tbs milk (can use any kind, I've even used Almond milk) 
  • 1 egg (beaten)

Steps to yumminess:

  • Preheat oven to 450*F
  • Grease cast iron, small baking sheet with parchment or round cake pan. (if using for biscuits with sausage gravy I recommend bacon grease it is awesome!) 
  • Combine dry ingredients, shred or cut in butter until looks like a coarse meal, if you work fast you can do it with a fork first and then fully incorporate with your fingers (please wash and dry first rinse in cold to cool hands) 
  • SLOWLY add milk while stirring. 
  • Form into a round (lumps lol) and put close together in the pan, I like to make a kind of flower shape for it. ((See picture above))
Brush tops with beaten egg and bake for 12 minutes or until browned and baked through. 

**Tip* You may want to keep milk handy to moisten dough a little more if it seems dry, this will help them crumble a little less if you want to use them to have sandwiches or if you enjoy them like I do with a little honey or fresh fruit jam* 


This is also a great recipe to let kids make, just measure out the ingredients if they are under 7 and let them mix as the recipe states. If older than 7 supervise them measuring themselves to give them the practice.

Summer is Here

Yep, you heard that right moms and dads out there, Summer is HERE! Which of course means....no school!




I am lucky that I can be home with them while they are out. I am lucky there are with me for a good portion of the summer as they are with Dad most of the year because of school.









HOWEVER, surviving the summer with kids wanting attention the ENTIRE day can run even the most even keeled mother ragged.









My children especially could stump a Pinterest mom with the need for entertainment and attention. Again lucky for me I AM a Pinterest mom and have a plethora of ideas the are spaced out over the summer to help us stay sane in the hot weather. Last week we had our first day out together since school let out and it went about as smoothly as I could have hoped it would.







First we had a smooth morning with a shower and yummy breakfasts for the kiddos. Then we hopped the local bus down to our town's library where I signed the kids up for their own library cards, we did a puppet show and then took out some books and movies to enjoy at home. Spencer spent some time talking and laughing with the fish in the aquarium. Out side they posed with and as statues (it was totally cute).






On the way back we had a little bit of money so we stopped at DQ and got some cheese curds and blizzards before making the short walk home. It was a blast and the kids had so much fun.







I love how much they love books and having them thank me for the "awesome snack" was pretty damn great.



In the weeks coming up we have a few more library trips, a fireworks show on the 4th, probably another BBQ or two and several small activities for the days when the weather doesn't want to cooperate with our plans, such as rock painting, puppet show making, forts, and family games to play.

All in all I think summer will go well and I will miss them when they have to go to theirs Dad's again.

 I even have a blast just making art with them. It makes me smile when Spencer draws our family and when Kenzee comes up with ideas that she does all on her own with no guidance. It really shows how creative she is.





This is going to be a great summer with lots of fun memories. I cannot wait for the next day of fun planned.

New things and some great Kids!

I just realized yesterday that it has been almost a month since I wrote my last entry! 

So to catch you all up on my to do's and such I am going to write about what has happened in the last month. 

First up my Andrew has accomplished a few things! He made his own homemade wheat bread all by himself! I have to say that as a cook/baker myself I am super proud of this! He was so proud of himself that he couldn't wait to call me and tell me and send me a picture. He also made sure he shared some with his Memere because he wanted to make sure everyone got to try it! This on top of his violin playing and recently finding out that he went to his first dance make me proud and sad all at the same time. He tried to call me before the dance but I was out running errands and missed the call, his father said he was all kinds of nervous and dead set against his father chaperoning the dance. (His father was teasing him saying he was going to go to the dance with him to keep and eye on him) I probably would have done the same thing, especially since it turns out there was a girl there that he wanted to see. (Protective Mama mode activated) They just grow too dang fast for my liking! 

Since last month Mckenzee has started her first time of selling Girl Scout Cookies for her troop! She has done pretty well for being a really shy girl in a state where all her family lives 3000 miles away. She was able to sell 97 boxes so far between online orders (from family back home) and regular orders here in WA. I am very proud of her! She has also been earning some badges and having a lot of fun with her new favorite friend Gracie who is another girl in her troop. I have also signed her up for camp where she should be paired up with her friend during what will be her first time at a camp away from home and without a family member with her. I am so nervous but proud at the same time that thinking about it I smile AND cry. 


Even Spencer is accomplishing things just like his big brother and sister! He has been talking more and more and starting to form short phrases among his words. Now mind you sometimes these phrases are him repeating something that he has heard before, ie: "Sit your butt down now!" and "Get down!" (you can probably guess who those were said to). Other times his phrases are "Mama help me?" (if he needs something fixed) or "I play?" (when he grabs one of the game controllers) or my favorite "Wanna bite?" (when he holds up his foot and wiggles his toes in my face after playing "This Little Piggy"). He has also gotten out of the "Let's Eat The Crayons" phase and has moved on to the "Let's DRAW/COLOR on EVERYTHING" phase. This includes walls, paper, HIMSELF! He has done some cute art with the toddler stampers I got him though and I had to share the one he gave me. 

Now as far as the things I have done this last month or so, I have to say I am a little behind where I wish I was. I am trying to get the house in order well enough that I can stop stressing about it but with a toddler it is like trying to shovel out the East Coast lately. No matter what I get done, five minutes later I have to do it again because "Tornado Toddler" has come through and remade the mess. I love him but oh boy does he keep me busy. (Insert big sigh) 

I am doing my best to get to the point of having the time to start my seeds for spring (I have seven new little plants to start), some crafting I want to start for gifts this year, plus some more work I would love to get done with Mckenzee for her to earn more badges, she is super excited to work on her Family badge and Bug Badge (she cannot wait to go back to the bug museum!) We will probably even get her a new butterfly or two with a habitat so her and her baby brother can watch them grow again!

Inspection Day and the Fantastic Birthday

Wednesday was "Inspection Day" in our complex so we had to make sure we had the house in order for when they came in to check things out. I have never lived in a place that required inspections so I went on a cleaning spree staying up until 12:30 am to make sure as much of the house was clean as could possibly be. That left just some vacuuming and touch up work for the day of the inspection and I was able to have the place completely awesome for when they came in to check it out! I was even able to keep "Hurricane Spencer" under order so that I didn't have to worry about him pulling out every toy he owns! The plus of the whole day was that when they came it was still early and I was able to get Spencer down for his nap after they left! As they were on their way out the door at the end of inspection we were complimented on how well we kept the place and they thanked us for being so clean! Yay, honestly even today it not too bad in our house, the floor could use a vacuum and the dishes weren't done because we took the day off and had a lazy Sunday for once, but tomorrow is Monday and I will have it all "spic and span" by the time lunch rolls around. 


Friday was little McKenzee's 7th Birthday party which of course meant I had to make sure the house was clean, the cake was made and all the presents were ready BEFORE she got home from school!  

I was able to get the "Pin the Carrot on Olaf" game drawn up and cut out, the cake baked and kitchen picked up, the floors vacuumed and presents all set before I had to get McKenzee from school.

Once we were home I had her pick up her room and then her friends were knocking on the door asking if she could go out and play and since it was her birthday I wasn't going to say no so she went out with an adamant "You BETTER be home by 5:30 for dinner!" While she was gone I was able to finish decorating her cake, (which had a huge break in it from sticking to the pan) and I made Olaf cupcakes too! 


 



Needless to say she was actually a few minutes early for fear of getting in trouble for being late. After quickly scarfing down some hot dogs and macaroni and cheese (since I was looking for a fast dinner), we were able to pick up real quick and I was able to finish up the Olaf noses JUST before her friends were knocking on the door for the party!






 Before I knew it my house was overrun with little girls wanting to put on McKenzee's princess dresses and singing along to Frozen on the TV. Luckily is wasn't too long before DJ was coming through the door to help me wrangle in the giggles and the hopping around of them as they had some fun playing and singing! 


Some family showed up and McKenzee's friends from before we moved here, and we sat down to open some presents before a few of the kids had to leave. Then some cake and ice cream to hop them all up before playing the "Pin the Carrot on Olaf" game. By the time that was done the kids wanted a little more ice cream and then we were left with about 3 little girls since the others had to get home. DJ took the ones that were left outside on the deck with Spencer and played a round of "Frozen Trivia" before it was time to call it a night. As we said goodbye to the last little girl, whose Mama stayed and chatted with us a bit before heading across the hall to her apartment. I am really starting to like our neighbor across the hall, she is funny, polite, and has a hand mixer! (That is funny because every time I go to make a cake I forget that I do NOT have a hand mixer or any kind of mixer for that matter) 


 All in all it was a great night for McKenzee and her friends and a long and exhaustive day for me in which I had to see my little girl get bigger again...oh sad Mama sigh. I love her so much but I wish that my kids would just stay little longer!

We Made It!

My Cookbook
So today we did our first home made projects!  I have been wanting to do some home made items for a while now but it always seems like time and supplies are never fully on hand.  HOWEVER, today I made sure I was fully prepped and ready to go....I had my recipes,

First Mckenzee and Spencer had their yummy lunch (which I am proud to say Mckenzee made all by herself) of a ham and cheese sandwich and chips for her, and roasted chicken, mickey mouse cheese faces, and apple juice for him. I myself am also proud of what I have since I am doing my best to eat a lot better.  I had a salad of chicken, cherry tomatoes, greens, Parmesan cheese, and Caesar dressing on the side. I also put a little black pepper on my salad which made me rarely even use the dressing so I was kinda glad of that. I had an ice water and a clementine to round out my lunch which was totally awesome!


Needless to say everyone ate it all up and we were ready in no time to get started!


First we started the finger paints I measured everything out and let Mckenzee add it to our pot on the stove. Here is the recipe I used :


Original Finger paint

Ingredients
1/2 cup cornstarch
3 Tbsp. sugar
1/2 tsp. salt
2 cups cold water
food coloring

Directions

In a medium pan, mix all the ingredients together to make the finger paint. Cook over low heat 10 to 15 minutes. Keep stirring the finger paint mixture until it is smooth and thick. After the finger paint has thickened take the pan off the stove and let the mixture cool.

After cooling, divide the finger paint into storage containers depending on how many colors you would like. Add a few drops of food coloring to each container. Stir the coloring in to the paint to determine the shade of color. You're ready to finger paint! Cover tightly when storing.

 Mckenzee begged me to let her do some mixing so I did, she was very careful and had fun until her hand got too hot.

While we were waiting for the paint to go from a thin liquid to the think consistency we needed we got started on the calming jars, one for Mckenzee and one for me!  This is the recipe we used to make our Calming Jars::


Mason jar or baby food jar.  Really, any kind of watertight jar will work.

Food coloring
Glitter
Glitter glue
Karo/Corn Syrup

“Mix 1 Tbsp of pink glitter-glue with about 1 cup of hot water, fill jar the rest of the way with corn syrup,  then add food coloring and a tiny tub of glitter. The glue and corn syrup makes the water so thick and gooey that the glitter just slowly and gently swirls around, it takes about 5 minutes for all the glitter to settle, perfect to gather your thoughts!  - See more at: http://www.dumpyourfrump.com/2011/09/29/use-a-mind-jar-to-calm-yourself/#sthash.kmN3pGIJ.dpuf
Mckenzee had a little trouble making sure to get glitter in JUST the jar but hey she is a "sparkly" girl so why not let her sparkle right?   She also liked the way the layers didn't mix until we shook the jar! Once we glued the lid on (to keep a child from opening it and spilling it I would recommend doing this yourself) she shook the jar and couldn't stop smiling!
I put together my jar while Mckenzee washed up and once we cleaned up everything from our jars it was time to take our paint off the heat and let it cool.

Mckenzee used that time to get started on her Valentine's Day cards for her classmates, since she decided this year she wanted to make them instead of buying them! (I am very proud of her for wanting to make them all special and different) 

After she did some cards and I washed up the dishes and counters the paint mixture had cooled!  We were finally ready to put it in our jars and color it! 
We started with yellow since it was our lightest color and I armed Mckenzee with a disposable baby spoon (which was a perfect size for the baby food jars we were making the paint in) and some food coloring.  She had a blast watching the white paint turn into the colors and before we knew it we had a rainbow of colors in our little jars! 



She even wanted me to line them up as such so we could take a picture of them to show you! WE LOVE RAINBOWS around here! 

All in all we had a fun little crafty day and hope to do something fun again soon.  I have lots of fun ideas I just have to get the supplies to make!
